Sweet Keto Mini Chaffle

A crisp, sweet keto mini chaffle made in a Dash mini waffle maker—simple ingredients, quick cook time, and perfect for a cozy breakfast or brunch.

Equipment

  • 1 Dash Mini Waffle Maker
  • 1 Small Mixing Bowl
  • 1 Whisk (or Fork)
  • 1 Measuring Spoons
  • 1 Spoon (To place batter into waffle maker)
  • 1 Silicone Spatula
  • 1 Silicone Brush (To oil waffle maker)

Ingredients
  

  • 1 each Large Egg
  • ½ cup Shredded Mozzarella (low-moisture, mild)
  • 1 tsp Vanilla Extract
  • 1 tsp Powdered Swerve
  • ½ tsp baking powder (optional, for fluffy texture)
  • 1 pinch Celtic Sea Salt
  • 1 tsp Avocado oil (to brush on waffle maker)

Instructions
 

  • Plug in and preheat the waffle maker until fully hot.
  • In a small bowl, whisk egg, vanilla, powdered Swerve, and salt.
  • Stir in mozzarella and baking powder (if using)
  • Once the waffle maker is hot, lightly brush on avocado oil on the top and bottom plates.
  • Spoon batter into waffle maker and close lid.
  • Cook 3-4 minutes, until golden crIsp.
  • Open the waffle maker and unplug. Let the chaffle rest for 1 minute before removing from waffle maker.
  • Remove waffle and place on serving plate.

Recipe Notes:
  • This recipe makes 2 mini chaffles using a Dash mini waffle maker.
  • Nutrition is calculated per 1 mini chaffle.
  • Use powdered Swerve for the smoothest sweetness and best texture.
  • Using more Swerve than 1 tsp can create a slight cooling sensation on the tongue, use more Swerve up to 2 tsp for sweeter chaffle.
  • Lightly oil the waffle maker after preheating, as needed.
  • When cooking is complete, open the lid, turn off the waffle iron, and let the chaffle rest on the bottom plate for 1 minute before removing– it firms up and releases cleanly.
  • Chaffles crisp more as they cool; avoid removing too early. 
 
Serving Notes:
  • Top with whipped cream (0.4 g Total Carb per Tablesppon)
  • Top with butter (no Total Carb addition)
